<p class="wp-block-paragraph">Everybody has a favorite chocolate chip cookie. Crispy or chewy? Thick or thin? Nuts or no nuts? &#8220;Salted Brown Butter and Tahini Chocolate Chip Cookies&#8221;&#8211;it&#8217;s quite a mouthful! But each of those elements, mixed together, makes the most magical combination of crispy <em>and</em> chewy cookies. They have a nutty flavor without any actual pieces of nuts to interfere with the perfect texture. (Sorry, nut lovers! But do feel free to add nuts, if you prefer).</p>



<p class="wp-block-paragraph">This is not a &#8220;I am in the mood for cookies <strong><em>right now</em></strong>&#8221; kind of recipe. It does require a bit of planning, but the end result is more than worth the effort. The cookies are best if the dough is refrigerated overnight (or up to a week) and they are also best eaten the day they are baked.&nbsp; But strategy is everything here! With chilled dough in the refrigerator, you can have hot, fresh from the oven cookies every day. Let that sink in for a minute&#8230;&#8230;!</p>

<p class="wp-block-paragraph"><strong>Brown butter</strong>: be careful not to over brown the butter. If the solids become darker than you like, straining the melted butter may save it. Otherwise leave the solids in for more flavor. You can also skip this step, but I think it&#8217;s worth it!

<p class="wp-block-paragraph">We are going to start with the dough from the <a href="https://unevieenchantee.com/2018/08/09/cuban-the-gateway-bread/">Cuban style bread</a>. It is quick to make, but it&#8217;s particularly great for stuffed breads because it is so easy to work with. Really, you are only limited by what&#8217;s in your pantry and your family&#8217;s tastes.</p>



<h3 class="wp-block-heading">Recipe Notes</h3>



<p class="wp-block-paragraph">Resist the urge to overfill the bread, especially with greasy ingredients. Cheese helps to hold things together (and out of your lap when you are eating!), but if it leaks out during baking we are talking &#8220;disable the smoke detector and scrub the bottom of the oven&#8221; level mess.</p>



<p class="wp-block-paragraph">On a related note, make sure that the seam is sealed well. Pinch it with your fingers and when you put the bread on the baking sheet, be sure that the seam is placed at the bottom.</p>



<p class="wp-block-paragraph">I like to use a <a href="https://www.bedbathandbeyond.com/store/product/real-simple-reg-silicone-baking-mat/1014294074?opbthead=true&amp;ta=typeahead&amp;Keyword=silicone-baking-mat">silicone baking mat</a> for kneading and shaping.  It has inch markings along the sides, but more importantly it resists sticking and is so easy to clean. Just carry it to the sink.</p>

<p class="wp-block-paragraph">People always seem impressed when you say that you bake your own bread&#8230;.if they only knew how easy it can be! The bread that we are making today is crispy on the outside and soft in the middle; it lacks the complexity and chewy texture of artisan bread, but it makes up for that in speed and versatility. And did I mention it&#8217;s delicious?!</p>



<p class="wp-block-paragraph">This bread is great on its own, but it really shines in a sandwich. Slice a loaf horizontally, fill with your favorite ingredients and cook on a griddle or in a panini press. Maybe even make a Cuban sandwich! </p>

<p class="wp-block-paragraph"><strong>Flour</strong>: All purpose and bread flour both work well for this recipe.</p>



<p class="wp-block-paragraph"><strong>Yeast</strong>: Either (Regular) Active Dry or Rapid-Rise will work. Buy them in the supermarket in individual packets, or in bulk (store in the freezer).</p>

<h3 class="wp-block-heading">Technique Notes:</h3>



<p class="wp-block-paragraph">A stand mixer with a dough hook makes this recipe simple to create, but it can also be made by hand or with a food processor. When using a stand mixer, do not turn the power beyond low (#2 on the Kitchen-Aid) or you will risk damaging the motor.  </p>



<p class="wp-block-paragraph"> The most important thing is that you only add enough flour to make the dough workable. Too much flour results in heavy, dry bread.</p>

<p class="wp-block-paragraph">In the first step, the dough has a batter-like consistency. This allows the yeast and sugar to be fully incorporated.</p>



<p class="wp-block-paragraph">Next, the salt is added. This step protects the yeast organisms from being killed by direct contact with the salt.</p>

Then pull the upper edge over and press with the side of your hand, making a tight seam. Lightly roll the loaf with your hands to the desired length. Now turn the oven on to 400° and close the door. Bake for about 30 minutes. The loaf should be light golden brown and sound hollow when you tap on the bottom.</span></div></li></ul></div></div>
